Penny was asked if she would like to make a dessert at the Pudding Club evening held at Colchester Institute and of course she said YES!
I spent the day working with 1st and 2nd year students and prepared a Raspberry ripple cheesecake with lemon curd and vanilla ice cream, which went down a treat with all the customers that came to the Colne Restaurant in the evening. It was lovely to see students with lots of enthusiasm as I was 10 years ago. It was also great working with Stephanie Conway and Jenny Lee who taught me when I was there and
also seeing other members of staff still there. I really enjoyed the experience and it was a privilege to be a part of the event.
